So I have found myself cooking more and more lately. Last week I made homemade Eggplant Parm. It was amazing, not to mention super easy. I got an eggplant, sliced it in circles, dipped it in egg and rolled it in breadcrumbs. After that I boiled some pasta, and put the eggplant in a saute pan. 15 minutes later we were sipping a really good bottle of wine and eating a delicious dinner.
That same day I decided to make oatmeal rasin cookies. They turned out ok but not the best I have had. They are easy to mkae but somewhat hard to perfect.
Today I made two apple pies (we went apple picking in Stowe at Shelburne Farms and have an overload right now). One was made the traditional way I make it and the second I got a little adventurous and made a lattice crust. I am bringing the latter to work tomorrow.
The other day I made gorgonzola and pancetta stuffed chicken breast. That was also good, but I think next time I will bread the chicken. We also had a delicious bottle of wine to compliment the meal as well.
Tonight its bbq chicken wings and beer, HAHA.

The grindstones!
SO if you have not guessed, this entry is about work, the good and the bad. First of all, I absolutely LOVE my teaching job. I have wonderful students who really value and cherish their lessons. They are all pretty good, especially since they are 5-15 years old, and they are a joy to be around. They are fun, energetic, and very interested in music and singing. I love working at NMA and I hope I continue to get more students.
The bad part is La Casa. Let's begin by saying, I really do like it there. It is one of the better serving jobs I have had. Its the first serving job where everyone is friendly with each other and we all help out. Of course there are some isolated situations where that is not the case, but it is a pleasant environment. BUT business has slowed, there is one server who is ruining it for the rest of us, and because of all this, there is a general feel of uneasiness amongst the servers and bartenders. I have made some great friends there, but the money issue is huge. I used to make very good money almost nightly, now its once in a while and most days are terrible so although I do like working there, I think it is time to jump ship before something bad happens. That being said, I will only leave if I find a job I think I will like. I made astounding money at another restaurant, but I dreaded going there. Every minute was hell. The manager was a douche, my fellow servers and bartenders were not personable at all, and although I was making close to $400 a night on weekdays, it was a complete nightmare. I have started looking into nannying again. Its consistent good pay, and its enjoyable. I am also looking into other restaurants but I sort of want to be done with the field.
If I nanny, I may be making slightly less than ideal money, but its flexible and I will have weekends off, which means I can get a church job and start performing more. Right now, I am working 7 days a week and barely have time to keep my house clean and the pets entertained. I need either better money working the same amount, or the same money with more time off.

1 month of marriage
Well, it has already been one month since we got married! Where does the time go? I can remember the whole day like ti was yesterday. Going tanning with Kathy in the morning, getting ready with my girlies!, walking down the aisle and shoving little Kenzie along until she finally broke down and passed up her duties as a flower girlie! HA! It was so cute! Waiting what seemed like forever to get to the vows, then once I said them was so relieved and was no longer nervous, then the reception!! This was the most fun and exhilarating day of my life!!!
I am just barely used to calling him my fiance by accident for so long, my manager at work asked me if I really got married or if I just wanted a week off!!!
Our bond has strengthened tremendously and I hope it continues to do so throughout our lives together!!

First day of fall
I have not posted in a while but a lot has/is happening right now.
Last week I took my kitty Tina and my rat Lacey to the vet. (Explanation....) Tina needed a rabies shot and a check up since she is getting older. She turned 17 on 9/1!!! I have had her since I was in 4th grade. A week and a half ago me and Dan noticed a small lump on the rat's stomach, and decided to watch it. When I made the appointment for Tina, I asked if I could bring ratty along too since she was sick. The bump had gotten bigger and she was in obvious pain. Tina got her shot and some blood tests and that came back indicating she has a thyroid problem, which most elderly cats get. She will have to take a pill.
The vet examined ratty too. He said she had an abscess. He drained it and gave us liquid antibiotics to give her orally for 10 days. It was berry flavored and she liked it. She drank it right out of the dropper. I gave it to her for 2 days and she got better, she moved around more, started eating more, and was generally happier. Sunday night I gave her the medicine and she was walking around and up and down her cage. Monday morning I woke up and went to give her the antibiotics around 10am. She was in her house and didnt come out when I called her. I thought that was weird but I assumed she really wanted to sleep. I tried again around 12:30 and this time I poked her, and she didnt move. I could tell she was alive, breathing, but she wasnt moving. I lifted her house up to see what was going on and she was 100% limp. She sort of fell to the side and laid there. I picked her up to see if she was ok, and it was obvious that she wasnt. It was labor day and my vet was not open. There was a list of other vet's on his answering machine that were open 24 hours. I called some of them and it was quite expensive to be seen and to put her down. Dan was just returning from his weekend long motorcycle ride so I decided to wait. Her situation was dire so we thought she would pass quickly. She died sometime between 12am midnight and 7am tuesday. Yea she was a rat, but she was super cute and very friendly. I just hope she didnt suffer for too long.
Dan buried the rat behind the back parking lot in the woods.
Tomorrow marks my first day back at school NMA (Newton Music Academy) started their fall semester Monday and my first lessons are Wednesday. I have 7 students of my own and 5 more that I am taking on until October 15 when the other voice teacher comes back from maternity leave.
Back to school means fall. I love everything fall. I got my new yankee candle catalogue in the mail today and I want to take a trip to the store to pick out a new fall candle. I am already thinking of Halloween and Thanksgiving. The day after Labor Day is like the first day of fall and the weather was totally appropriate for it too.
